Procurement within Service Delivery ITIL Processes

Hello,
I am attempting to see if ITIL can be used to refine processes for procurement (sourcing, purchasing). I am a bit new to the ITIL way of thinking and need a second opinion.
The procurement processes that I am looking at utilize computer based systems to track requests on the sourcing side of things, but purchase order creation is handled through a group email box (FIFO). Purchase order creation utilizes other systems (one to track assets/orders/projects and another to track financials/PO creation) to insure all information is correct (financials, pricing, ect). Once everything is verified PO info is exported to the system that is used to create the PO.

Any input you can provide would be helpful. If more information is needed, please let me know. Thanks
